Meal Plan Monday | Jan 28 – Feb 10

Hey guys! Welcome back to Meal Plan Monday! I can’t believe we are about to jump into February! We actually don’t go out to eat on Valentine’s Day, but I am planning a romantic dinner for Shae and I so be on the lookout for that!

So here is what the next two weeks are looking like:

Monday Jan 28: Crockpot BBQ Chicken – I still have a package of chicken legs in the freezer as well as a bottle of bbq sauce leftover so I figured I would make some bbq chicken legs! Our favorite BBQ sauce is Sweet Baby Ray’s sweet & spicy. It’s so good! Truthfully, I’m not a big fan of BBQ sauce but I will eat any BBQ with this sauce. This is a really simple dinner: throw your chicken legs into the crockpot with your favorite BBQ sauce and cook on low for 4-6 hours and serve with your favorite side dishes!

Tuesday Jan 29: Homemade Chili – This recipe from Pip and Ebby is what I go off for my chili, it is the BEST. I do change a few things up, but you won’t be disappointed! I haven’t made it since fall, but it’s always a huge hit!

Wednesday Jan 30: Chili leftovers. I make a giant pot so it will last an extra night!

Thursday Jan 31: Crab Linguine Alfredo – My dad has been staying with us during the week because he is working up by us, which is about 3 hours from where he lives. So he has been bring fresh crab to our house, so I am going to give this a try! I plan on just using linguine noodles, Alfredo sauce doctored up (cream cheese, butter, a little milk, garlic and cayenne pepper).

Friday Feb 1: Crockpot Cube Steak – My dad has also been bringing us cubed elk steaks, so I am going to throw them in the crockpot with a can of cream of mushroom, an au jus packet and some beef broth to make a little gravy and make some mashed potatoes to serve over. Delicious!

Saturday Feb 2: Qdoba Burrito Bowls – Shae has staff duty which means he has 24-hour duty, which means he won’t be home for 24 hours. So I am thinking we will run over to Qdoba and grab some burrito bowls for dinner and not worry about cooking for a night!

Sunday Feb 3: Zuppa Toscana – This recipe from The Recipe Critic is SO good. I have only made it once before, but it was a huge hit and I am a sucker for Olive Garden soups, so we are going to do a soup Sunday and eat this!

Monday Feb 4: Crockpot Pulled Pork Sandwiches – I have been CRAVING pulled pork sandwiches (with pickles) for weeks now and I have been dying to make it. I’ve never made it before so I figured I would try this recipe out from Mom Needs to Know.

Tuesday Feb 5: Sheet Pan Chicken Fajitas – I had these on my last Meal Plan Monday, but they were so good and we are already wanting them again! Plus, I had leftover chicken and lots of tortillas, so I really only need to buy the bell peppers. I highly recommend these, you guys. They are delicious!

Wednesday Feb 6: Leftover chicken fajitas! I think we might try making chicken fajita nachos with the leftovers this time around.

Thursday Feb 7: Oven Baked Pork Chops – I had a package of pork chops in the freezer and I saw this recipe from RecipeTin Eats that I thought looked good. Not anything crazy, but uses up the meat I already had in the freezer!

Friday Feb 8: On the road – We are heading to Oregon after Shae gets off work for the weekend because our baby sprinkle is being held at my moms on the 9th! So I’m sure we will stop and get something at Sonic.

Saturday Feb 9: BBQ Hotdogs & Hamburgers – We are having a bbq of hotdogs and hamburgers after our baby Sprinkle!

Sunday Feb 10: Grilled Cheese & Tomato Soup – I’ve mentioned this before, but after a day of traveling, I like to make something simple for dinner when we get home. But I am really considering trying out the tomato soup recipe I have linked from Inspired Taste. It seems really simple and I’m sure it is delicious!

That wraps up our meals for the next two weeks. I will be out grocery shopping today. If you have any suggestions for meals, please send them my way!
