Meal Plan Monday! | Nov 19 – Dec 2

Welcome to Meal Plan Monday!

Every other Monday I plan out our dinners for the next two weeks. I have some staples that I make often, but I also spend a lot of time on Pinterest looking at other people’s meal plans and searching for recipes. I figured since I am already investing the time, why not help someone else by sharing my own meal plans. Be sure to subscribe so you don’t miss out on future meal plan Monday posts!

The Process

Before I plan out my meals and go grocery shopping, I like to first make a list of ingredients I already have on hand that would make a meal. This is a huge tip and will save you money! When I checked the cupboards and refrigerator, I had the following:

  • a package of gnocchi
  • white & brown rice
  • linguine pasta noodles
  • several cans of tuna fish
  • frozen turkey burgers
  • brats

From here, I will make a list of meals that have these ingredients in them and fill in the days of the week. If I ever get stumped on what to make for a day or two, I will think of a theme for that specific day of the week. As you know, we do Soup Sundays in this house! A sample of themes for the week might be:
  • Monday- Meatless Monday
  • Tuesday- Taco Tuesday
  • Wednesday- Pasta night
  • Thursday- Crockpot Meal
  • Friday- Pizza night (order in or make homemade)
  • Saturday- Seafood Saturday
  • Sunday- Soup Sunday

So I planned out the next two weeks, but we will be out of town for a few days, as it is Thanksgiving week this week! We will be spending this Thanksgiving with Shae’s family near Portland, Oregon and we are so excited. Here is what I came up with for the next two weeks:

November 19 – 25

Monday: Chicken and Broccoli Stuffed Shells – I actually don’t use a recipe for this, but I wanted to share with you all a recipe that is similar to what I make. This is hands down one of Shae’s favorite meals I make. So I do what this recipe calls for, but I add in bacon as well! I will pair this with some garlic bread or a salad.

Tuesday: Mini Chicken Pot Pies – So I mentioned that the stuffed shells were one of Shae’s favorite meals, well these mini chicken pot pies are his number one favorite! I started making these not too long ago and he is obsessed. Again, with these, I add in extra cheese and some extra seasonings to make it my own. My favorite thing about making this is being able to freeze the leftover filling and making it again the following week or including it in my next meal plan!

Wednesday: Once Shae gets off work on Wednesday, we will be hitting the road and driving about 2 hours to Oregon. When we do this, we usually stop on the way down and grab a bite to eat.

Thursday: Thanksgiving Dinner! This will consist of the usual turkey, stuffing, rolls, deviled eggs, etc. My pregnant self is SO excited.

Friday & Saturday: We will still be at Shae’s moms house so I have nothing planned for these days but I have a feeling we will be eating leftover Thanksgiving food.

Sunday: Since we have a day of traveling home, I always make something easy once we get home. I am planning to make good ol’ fashioned grilled cheese and tomato soup.

November 26 – December 2

Monday: Tuna Casserole – We have lots of cans of tuna fish (thanks to purchasing at Costco) so I figured a tuna casserole would be good. This is my go-to recipe when I make it! I will most likely pair this with a side of fruit.

Tuesday: Leftovers (That is if my husband doesn’t eat it all during his lunch on this day). The tuna casserole recipe makes way more than what we could eat in one night!

Wednesday: Turkey Burgers & Brats- There is no special recipe. I don’t eat brats and Shae doesn’t eat turkey burgers so I will just throw 1 or 2 of each in the oven, put them on some buns and probably bake some french fries to go with. Personally, I love guac or avocado and red onion on my turkey burger and Shae likes pretty much any condiment we have on his Brats. Super easy and simple and we have an un-opened box of both so they need to be eaten!

Thursday: Breakfast for Dinner- Eggs, hash browns, bacon and probably Kodiak pancakes. Yum!

Friday: Steak with a side of rice and a side of broccoli.

Saturday: Homemade Pizzas! This is one of our favorite things to make together. We all go in the kitchen, turn on some music and throw together our very own pizza. We love homemade pizza night. I highly recommend the Boboli Pizza crust brand. It’s our favorite and it comes with marinara sauce already included!

Sunday: I am making Olive Garden Copycat Crockpot Chicken Gnocchi Soup this week for Soup Sunday. If it turns out well, be on the lookout for a blog post in the future!

Grocery List

I wanted to make it even easier for anyone who needed all of the ingredients for everything on this meal plan. My life has been forever changed ever since I started doing Walmart Grocery Pickup.     YUM! Your menus look so delicious. I like meal planning and do it every Sunday, but I love the idea of planning for two weeks!!! I also check my pantry and fridge first to see what we already have, it helps us from buying duplicates and saves A LOT of money! Thanks for sharing your meal plan and recipes with us. I’ll definitely have to give them a try.
